When I tried the evaluation software, I was able to make spreadsheets. Now that we’ve tried making a website, I got errors in reference to assemblies in web.config.
Can I assume this will be corrected when we purchase aspose?

Please let us know which Aspose assemblies you are using. Are you using Aspose.Cells? What type of error you are getting? Please share more details. It will be helpful if you could provide us sample web or console application project replicating the error. You may also share screenshots showing your issue. We will look into it and help you asap.
