we are using Aspose Cells 7.3.4 in our company and changed from Java 1.6 to 1.7 (1.7.0_60), which should be supported by this version (checked the system requirements).
To create excel and pdf exports we use template files. Now we have the strange behaviour that the font in the created pdf’s is everywhere Calibri although in the template the font is set to Arial.
I tried to fix it by setting some save options but without success.
Is there any way to stop the overriding of the font? Attached i have a small example. The template file has some text in Arial and Calibri which looks fine when generated to excel but incorrect for pdf.

We have evaluated your presented scenario against the latest version of Aspose.Cells for Java 8.1.1.4, and the results are up to the expectation. The resultant PDF has both Arial & Calibri fonts embedded, that is the desired behavior. We are not sure why your current version of the API is behaving differently, however, if you the results were correct before upgrading the JDK then there could a bug in your current version of the API. We would suggest you to try the latest version (link shared above) in your environment to check the results yourself, Please also check the following detailed articles for your reference.
