I would like to log into Exchange and change subjects on specific mails. If I go through the documentation, it does not seem possible.
Any thoughts?

You are right. It is not possible to edit an existing message in the mailbox (which makes sense as well). All you can do is download the existing message, delete it and append the edited message again to the same folder. However, please note that that appended message won’t be in sent/received format. Instead, it will be in draft format. Please feel free to write to us in case you have any additional query/inquiry in this regard.
