Can you tell me if and how to dynamically create Word tables with a dynamic number of rows and how to hide / unhide Word portions of the template.

The way to dynamically hide/unhide document portions is to use sections. You can either create a document with several sections (insert section breaks in MS Word) and delete Section objects at runtime in Aspose.Word or create several documents and combine sections from them into one report like shown in the Product Catalog demo.
