if you run attached project application will make replacement in provided file but later when newly created document is opened replacement will not be visible (original text will be still shown).
You are unable to notice any change in the output PDf because your PDF document contains images and there is a hidden layer of text over these images to make the PDF searchable. The TextFragmentAbsorber is able to find and replace the hidden text but images cannot be changed.
